Pulled Pork Sandwiches

Ingredient List for Dry Rub:

1 TABLESPOON CHILI POWDER
2 TEASPOONS GROUND CUMIN
1/4 TEASPOON GROUND ALLSPICE
2 TEASPOONS SALT
1 TEASPOON GROUND BLACK PEPPER

Ingredient List for Pulled Pork:

4-5 POUND PORK SHOULDER OR BUTT
1 TEASPOON GREAT FLAVORS® CHICKEN CONCENTRATE MIXED WITH 1 CUP HOT WATER
1 TEASPOON LIQUID SMOKE
2 CUPS OF YOUR FAVORITE BBQ SAUCE

Suggested Options:

YOUR FAVORITE VARIETY OF BUN
SLICED RED ONION
CHEDDAR CHEESE SLICES

Cooking Instructions:

Preheat the oven to 325 degrees. Combine all Dry Rub ingredients in a small
bowl. Cut pork into 2 inch thick pieces (to speed up cooking time) then cut 1/8
inch deep, crisscrossing grooves into the pieces. Coat pieces with Dry Rub,
pushing it into the grooves. Let sit or five minutes. Add the Chicken Concentrate
in the hot water and liquid smoke to a pressure cooker or Dutch oven.
Pour BBQ Sauce over pork pieces and securely lock the pressure cooker’s lid or
cover the Dutch oven. Set the pressure cooker to high and cook for 90 minutes or
if using a Dutch oven, place in oven for eight hours. If using a pressure cooker, let
pressure release naturally for at least 10 minutes, before quick releasing any
remaining pressure and safely removing lid. If using a Dutch oven or smoker,
remove from oven. Pork should be fork tender and shred easily. Serve pulled apart
on buns with your favorite toppings such as red onion and cheddar cheese.
