VEGETABLE OIL SPRAY
2 POUNDS SKINNED CHICKEN BREAST, FINELY DICED
1 CUP YELLOW ONION, DICED
1 CUP RED ROASTED PEPPERS, DICED
2 TABLESPOONS MINCED GARLIC
1 PACKAGE SMALL WONTON SKINS (4 INCHES)
1 CUP OLIVE OIL
1 TABLESPOON GREAT FLAVORS® CHICKEN CONCENTRATE
1/2 TEASPOON FRESHLY GROUND PEPPER
8 OUNCES MOZZARELLA CHEESE, SHREDDED
1/2 TEASPOON DRIED BASIL
1 CUP SHITAKE MUSHROOMS, STEMS REMOVED, DICED
In a large saucepan, over medium heat, add 4 tablespoons of oil.
Sauté chicken and onion in the oil for 5 minutes, stirring occasionally.
Reduce heat to simmer. Add roasted peppers, garlic and Chicken Concentrate.
Stir and allow mixture to simmer another 2 minutes.
Turn off heat, stir dried basil and mozzarella, and allow mixture to cool.
Per directions on wonton skin package, spoon approximately 1 tablespoon
chicken mixture onto the middle of each skin and fold over, pressing edges
until they stick together. Place rolls on slightly greased cookie sheet allowing
1 inch between rolls. Preheat oven to 375 degrees.
Place cookie sheet in oven and bake for 10-12 minutes.
Serve with one of the Great Flavors® sauces. Options include:
Cabernet Cream Sauce, Mushroom Bordelaise, Marsala Sauce,
Vodka Sauce, Au Poivre Sauce or Chablis Sauce.
